1 pt olive oil
Schilling’s Italian Seasoning
Fresh thyme (if available)
Fresh Garlic
The first thing, you want to remove 1 tablespoons for olive oil from the bottle. Remove all lids and place a small funnel in neck. Add 1-tablespoon Schilling’s Italian Seasoning, you have crushed between your hands to release the flavors into oil. Also add two or more cloves of crushed garlic, running them through a garlic press or use a very wild knife blade to smash flat on cutting board and mince remains before sliding off surface into oil. Place a sprig of fresh thyme into the bottle (this is mostly for looks, so make the sprig long enough to be barely covered by oil when setting on counter). Replace all lids and shake very well. You will need to shake mixture very thoroughly three times a day for the first week, even if refrigerated to prevent spoilage.
Modifications: add 1 teaspoon fresh ground five Pepper blind.
8oz balsamic vinegar
4oz frozen Raspberries
Fresh Mint (if available)
Also when you first return home with balsamic vinegar, you will want to transfer it to a 12oz bottle. Add 1oz (2 tablespoons) water, 10 to 15 raspberries and a sprig of fresh mint (if available, and for this week, do not substitute). Close bottle and shack well, this must be refrigerated. Place remaining raspberries in freezer. Shake bottle gently every day to combine flavors every.
Basic Chicken Rub
1 teaspoon Sea Salt
1 teaspoon fresh ground Five Pepper Mix
1 tablespoon Sugar
1 tablespoon Ground Rosemary
1 tablespoon Ground Sage
1 ½ teaspoons Chili Powder
Small Spice Shaker or Small Glass Jar
Place all ingredients in small bowl, except the jar/shaker; combine well using small wire wisk. Carefully transfer to container, shake well, label and store with your other spices. Modifications: add 1 tablespoon Citrus & Basil Rub. add 1 tablespoon Smoky Barbecue Rub . or add 1 tablespoon of each.
Basic Beef Rub
1 teaspoon Sea Salt
1 teaspoon fresh ground Five Pepper Mix
1 teaspoon Cumin
1 tablespoon Hickory Burgaer Seasoning from Western Sizzle
1 teaspoon Blackened Seasoning from Zatarain’s
1 ½ teaspoons Chili Powder
Small Spice Shaker or Small Glass Jar
Place all ingredients in small bowl, except the jar/shaker; combine well using small wire wisk. Carefully transfer to container, shake well, label and store with your other spices. Modifications: add 1 tablespoon Citrus & Basil Rub. add 1 tablespoon Smoky Barbecue Rub . or add 1 tablespoon of each.
Home-made Tarter Sauce
½ teaspoon Prepared Mustard
¼ teaspoon Worchester Sauce
2 tablespoons Sweet Pickle Relish
1 cup Miracle Whip
Small Glass Jar
Place all ingredients in small bowl, except the glass jar; combine well using small wire wisk. Carefully transfer to container, or serve with fish immediately.
